Seasonal Breakfast Crumble

My healthy breakfast crumble uses freshly cooked apples and blackberries with an oaty, nutty topping and is the perfect Sunday breakfast treat. It's wheat-free and contains no unhealthy fats or added sugar.

I like to cook the fruit the night before and then all I have to do in the morning is prep the topping. If you're a sucker for apple crumble and ice-cream this is the ideal healthy alternative. Enjoy it served hot with some frozen yoghurt on the side as a guilt-free dessert.

Apples and blackberries are ripe for picking at the moment and this recipe is perfect for putting picked fruit to good use.

I used freshly picked blackberries and apples from the garden which gave this particular breakfast crumble a special touch :)


Seasonal Breakfast Crumble

(Serves 2 - amounts can be varied)


Apple - 1 large

Blackberries - 1 punnet

Coconut oil - 1 tablespoon

Honey - 1 teaspoon

Freshly ground cinnamon - 2 pinches (one for the fruit and the other for the topping)

Whole rolled oats - 25g

Almonds - 8

Walnut halves - 4

Sunflower, pumpkin & chia seeds - 2 teaspoons


To cook the fruit

1. Peel, core and chop apple.

2. Put a small amount of water into a saucepan - just enough to cover the bottom.

3. Heat the the apple in the saucepan, continuously stirring until it softens.

4. Add the blackberries and a pinch of cinnamon and heat further, still stirring, until the blackberries are cooked through.

5. Place into serving bowls (I use ramekins) and set to one side.


To make the topping

1. Roughly chop the almonds and break up the walnut halves.

2.. Melt the coconut oil and honey in a saucepan or small frying pan.

3. As soon as the coconut oil starts to bubble add a pinch of cinnamon and stir in the oats, nuts and seeds.

4. Toast for approximately 5 minutes over a moderate heat, stirring continuously.


To serve

1. Top the cooked fruit with the oat mixture.

2. Leave to cool and enjoy for breakfast or if having as a dessert reheat in the oven and eat it hot.
